Go Green!Supercharge your diet with a variety of nutrient-dense leafy green veggies.
Leafy greens are packed with energy-boosting vitamins and minerals, blood-building chlorophyll, and cancer-preventing compounds.
Include some in your diet daily-as a raw salad; lightly steamed; stir fried with tofu, or blended with banana, berries, chia seeds and coconut water for a sensational superfood smoothie!
Choose from some of the following and make sure they’re organic as conventionally grown leafy greens are heavily sprayed with pesticides:
SPINACH:
Full of calcium (yes surprise, cow’s eat grass, not milk products!), iron, vitamins A, C, E, lutein and zeaxanthin which promote healthy vision and prevent macular degeneration. Best eaten raw in a salad or smoothie to retain the nutrients.
KALE:
Packed with vitamins A, C, K, and E, and energy boosting B vitamins. Also full of flavonoids that promote good circulation and a strong immune system. Don’t soak kale as you’ll lose many of it’s nutrients. Steam lightly, eat in salads, juice it, or add to smoothies.
COLLARD GREENS:
Rich in folate, potassium, calcium and fibre. Also high in sulphur compounds which increase the liver’s ability to detoxify, and the antioxidants vitamins A, C, E, manganese, and zinc. Steam lightly.
WATERCRESS:
Used for thousands of years to cleanse the body and purify the blood. Good source of iodine which is important for thyroid health and regulating the metabolism. It also stimulates bile flow which helps us absorb fats in our diet. Enjoy it in a fresh salad or make into a soup.
ROCKET:
This peppery tasting green is packed with vitamins A, C, E, iron and potassium which all promote a strong immune system, good vision, and healthy blood pressure. Also high in vitamin K which maintains bone density and helps with blood clotting. Great raw in salads, made into pesto and added to sauces.
MUSTARD GREENS:
Full of vitamins A and C, folate and manganese. Also contain a significant amount of anti-inflammatory omega-3 fatty acids and liver detoxifying enzymes. They promote cardiovascular health and help prevent cancer. Saute your mustard greens to lock in the nutrients and flavour.
and dandelion? eat it raw!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
For when you are feeling like giving up!
Truly inspirational! Sometimes you have to believe and the “impossible” happens!
